Alaskan Bouillabaisse

Jade Restaurant, Sheraton Hotel of Anchorage
Fresh Gulf of Alaska seafood stewed in a lemon saffron broth, served on grilled olive bread.

Alaskan BouillabaisseIngredients
5 Mussels
3 oz. Sable Fish, diced
3 oz. Halibut, diced
2 Scallops
3 oz. King Crab
2 oz. Lemon juice
4 oz. Saffron broth
2 oz. Butter
2 oz. Olive oil
2 slices Olive bread

Season and grill the bread slices. Reserve.

Place olive oil in pan, add the fish and lightly saute. Add the mussels, saute briefly, then add the scallops and saute briefly, again. Gently pour the saffron broth into the pan, add the lemon juice and cover until the mussels open. Add the crab. Finish with the butter. Season with salt & pepper to taste. Place grilled bread in center of bowl and ladle seafood on top of bread, making sure the sauce also goes into the bread.
