Mediterranean Halibut

Marinade
1 cup white wine
1/2 cup olive oil or vegetable oil
1/2 tsp oregano
1/2 tsp basil
1/2 tsp lemon pepper
1/2 tsp granulated garlic

Mix all ingredients into bowl and stir frequently. Add (2) 8 oz. halibut filets- marinate in refrigerator for at least one hour.

Use sauté pan and add a small amount of olive oil. Sauté halibut filets at medium heat 4-6 minutes on each side or bake in over for 10 minutes or until desired doneness.

Topping
1/2 small red onion diced
8-10 Kalamata olives- sliced
8-10 Cherry tomatoes- quartered
Pinch of Oregano & Basil
Salt and pepper to taste
1 lemon squeezed
1/4 red or green bell pepper diced

Mix all ingredients. Top each filet with topping and sprinkle with feta cheese.

Garnish and serve.
