Steamed Dungeness Crab with three Dipping Sauces

As prepared by Annie Mae Lodge

To Prepare Crab
Fill large pot with water and add 1/4 cup butter and 1/2 tsp. salt. Bring to a boil and add cleaned Dungeness crab. Boil for 7 minutes. Remove and serve with the following sauces for a tasty and beautiful plate. (Do not overcook the crab or it will be tough instead of melting in your mouth).

Tarragon Dipping Sauce
1/4 cup White Wine Vinegar
3/4 cup Canola oil
1/2 cup honey
1/2 cup whole grain mustard
1 Tbsp. Fresh chopped tarragon
Salt and pepper to taste
Put all ingredients together in a food processor and whip. Chill and serve.

Guacamole Sauce
1 Avocado peeled and diced
1/4 Jalapeno pepper chopped
1/4 Tomato-medium chopped
1 clove garlic-minced
1 lime-juice only
1 Tbsp. Cilantro chopped
1 Tbsp. Green onions chopped
Salt and pepper to taste
Put all ingredients in a bowl and mash together until well blended. Chill and serve.

Hoisen Sauce
1 cup bottled Hoisen Sauce (Asian cooking section)
1 Tbsp. Soy sauce
1 tsp. Sambal sauce (chili sauce)
Stir together. Chill and Serve
