Style Salmon-Stuffed Halibut with White Wine Sauce from Gwin’s LodgeSalmon Stuffing 1/4 cup chopped onion 1/4 cup chopped celery 2 tablespoons butter 1/2 pound cooked salmon (flaked) 1/4 cup dry breadcrumbs 1 teaspoon grated lemon peel 1/4 teaspoon salt dash of pepper Stuffing Preparation Saute onion and celery in butter; then stir in cooked salmon, breadcrumbs, lemon peel, and salt and pepper. Halibut Preparation and Baking 11/2 pound halibut fillets (8 pieces) Place one of the halibut fillets in a buttered baking dish. Sprinkle it with paprika and spread salmon stuffing evenly over the top of the base fillet. Place the other halibut fillet on top of the salmon stuffing. Cover the dish and bake at 425°F for 20-25 minutes. White Wine Sauce 1/8 teaspoon paprika 2 tablespoons butter 1 1/2 tablespoons flour 1/4 teaspoon salt dash pepper & paprika 3/4 cup half & half 1/4 cup white wine Wine Sauce Preparation In a small saucepan, melt butter, and then stir in flour, pepper, paprika, half & half, and white wine. Stir until thickened. Presentation Remove baked salmon-stuffed halibut from the oven and portion. Ladle wine sauce over halibut and serve. Garnish with lemon and edible flowers.
