Roasted Alaskan Oysters

Roasted Alaskan Oystersby Mick Hug of Mick’s at the Inlet in Anchorage

Ingredients

  • 1 cup chopped Green Onion
  • 1 cup diced Artichoke Hearts
  • 1 cup grated Reggiano Parmesan
  • 3/4 cup Mayonnaise
  • 1 tbsp. White Truffle Oil
  • 2 dozen fresh Oysters

Preparation

Pre-heat oven to 450 degrees. In medium size mixing bowl, combine mayonnaise, cheese, artichoke, green onion, salt & pepper. Shuck oysters and loosen from shell, keeping them in the half shell. Place approx. 1 Tbsp. of filling on each oyster. Place stuffed oysters on cookie sheet and roast 10 to 12 minutes, until golden and bubbly. Drizzle each oyster with oil and serve with crusty bread and salad.
