Jalapeno Olympia

A Southwestern version of Halibut Olympia

This recipe was previously requested by Bon Appetit. Jalapeno Olympia is not featured on Pipers regular menu but is sometimes offered as a weekly special and is also available through the catering department for group functions.

Jalapeno OlympiaIngredients
2 8 ounce halibut filets
1/2 green or red bell pepper (or mix)
1/4 white onion and 3 stalks of green onion
1/2 cup white wine
Juice of 1 lemon
Juice of 1 lime
3 tsp butter
8 ounces mayonnaise
1 bunch of cilantro (stems removed)
1/2 tsp cumin
1/2 tsp oregano
1 or 2 jalapeno peppers, seeds removed
(however hot you like, wear gloves 
to seed the peppers!)
Dash of granulated garlic
1 cup Panko (Japanese coating)

To Prepare
Dice bell pepper and put on bottom of 9-inch baking dish. Place halibut filets on top of peppers. Mix white wine, lemon juice, lime juice and butter. Pour over the top of the filets and peppers. Mix in a food processor the mayonnaise, cilantro, cumin, oregano, garlic and jalapeno. Blend until mixed. Add Panko bread crumbs to the mix and spread over the top of the halibut.

Bake at 350ºF for 10 to 15 minutes until slightly browned. Serves 2.
