Japanese Sunomono (Cup)
Ingredients:
Fresh salmon, sliced
Steamed shrimp
Snow crabmeat
Sliced English cucumber and carrot
Dressing:
Chopped English cucumber
1-2 tsp Ume plum vinegar
1-2 tsp Yuzi dressing
3 tsp rice vinegar
Make a round ball with sliced salmon and steamed shrimp covered with snow crabmeat; put them into a martini glass. Decorate with sliced English cucumber and carrots. Pour the dressing into the glass.
Salmon Carpaccio
Ingredients:
Slices of fresh salmon fillet
Jalapeño and scallion
Dressing:
1 tsp olive oil
1 tsp balsamic vinegar
1 tsp Ponzu sauce
1 tsp Yuzi dressing
Put slices of fresh salmon on the plate and put jalapeno and slices of scallion on top. Pour dressing over each piece of salmon.
