Halibut Cakes

Makes 10 medium sized cakes

Wayne and I had dinner with Marcus and his family recently. He had some halibut thawed from a trip to Seward this past August with Captain Will and Dusty from Glacier Fishing Charters, so we decided to whip up these halibut cakes. We feel the texture of fish cakes and burgers is improved when the fish is run through a meat grinder. As an added bonus we had vegetables and herbs from their family garden.

Ingredients:

1 lb halibut, ground
¼ cup onion, finely chopped
½ red bell pepper, finely chopped
1 celery stalk, finely chopped
1 large carrot, finely chopped
1 garlic clove, finely chopped
1 egg
¾ cup panko
Handful of fresh parsley, finely chopped
4 tbs canola oil

Lightly sauté the onion, pepper, celery, carrot and garlic. Mix all ingredients in a large mixing bowl. Form into 10 equal patties and fry on each side about 4-5 minutes. Serve with tartar sauce or a spicy mayo made from siracha sauce and mayonnaise.
