Chipotle Halibut Salad

Ingredients:
3/4 lb. halibut
3 tbsp chipotle mayonnaise
2 tbsp mayonnaise
¼ cup green onion
Sea salt and fresh ground pepper to taste

Chipotle Mayonnaise
Blend one can of chipotle peppers to one cup of mayonnaise in a high-powered blender. Add a pinch of dill, pinch of oregano and a pinch of thyme.

Preheat oven to 350 degrees. Spray cooking spray in a baking dish. Place halibut fillets skin-side down. Bake for 12 minutes or until firm. Let cool entirely. Once cooled pull halibut from skin and flake into small pieces, add remaining ingredients and mix thoroughly. Serve with crackers, crudités or stuffed in a small sweet pepper.
