Salmon skewers are the perfect answer for summer grilling. These skewers combine wild Alaska salmon, mild red onion and bell peppers with sweet and tart pineapple on the skewer. Additionally orange zest, warm ginger and salty soy blend with honey to create a sweet and tangy marinade that makes this dish the star at your BBQ.

Wild Alaska Salmon and Pineapple Skewers

Ingredients:

Salmon Skewers
  • 3 wild Alaska salmon fillets
  • ½ pineapple
  • 1 red bell pepper
  • 1 red onion
  • 1 tbsp olive oil
Marinade
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp chopped parsley
  • 1 tbsp orange zest
  • 1 tbsp chopped ginger
  • Salt and pepper to taste

Preparation:

Step 1: Make the marinade.

In a bowl, mix all the ingredients for the marinade.

Step 2: Prepare skewer components.

Remove the skin from the salmon and cut into 2-inch cubes. Cut the pineapple into 2-inch cubes. Place the salmon and pineapple pieces in a bowl and mix with the marinade. Cover and let marinate in the refrigerator for about 15 minutes. Cut onion and pepper into 2-inch cubes.

Step 3: Assemble skewers.

Place the salmon cubes, pineapple cubes, bell pepper cubes, and red onion cubes on skewers in an alternating pattern.

Step 4: Grill skewers.

Preheat grill to medium heat and oil racks with olive oil. Place skewers on hot grill rack. Cover and grill for 8-10 minutes, turning skewers several times.
