Simon & Seafort's Cedar Plank Salmon

Ingredients
Fresh Salmon Steak 1-8 oz.
Fresh Dry Rub Seasoning 1 1/2 tsp.
Vegetable Mix 9 oz.
Seasoning Salt 1/2 tsp.
Lemon (1/6th Squeeze) 1 each
Lemon Slice1 each
Olive Oil 1 Tbsp.
Fresh Vegetable Mix
Red Potatoes-blanched and cut in half.3
Red Bell Peppers-crushed and cut 1/2
Mushrooms-steamed and halved 6
Medium Red Onion-cut into 6 wedges 1 lb.
Yellow Squash-trimmed and cut. 1/2
Zucchini-trimmed and cut 1/2

Dry Seasoning Rub
Lemon Pepper. 2 tsp.
Granulated Garlic. 1 tsp.
Dry Whole Tarragon 1 tsp.
Dry Whole Basil 1 tsp.
Paprika 1 tsp.
Kosher Salt 1 tsp.
Brown Sugar (light) 1 tsp.
Dry Seasoning Rub Procedure:
Place all ingredients into a food processor and blend well.

Vegetable Mix
Combine and mix together.

Seasoning Before Roasting
Coat both sides of salmon with dry seasoning, hold.

Cedar Plank Roasting
Preheat oven to 375 degrees. Place salmon into center of cedar plank. Toss vegetables in a small bowl with 1/2 teaspoon seasoning salt and olive oil. Transfer and place the plank vegetables on each side of the salmon. Squeeze the lemon over the top of the salmon. Place the plank in the oven and roast for 8 minutes. Pull plank from the oven and turn the salmon over. Roast for an additional 8 minutes or until an internal temperature of 120-130 degrees has been achieved. Remove cedar plank from oven. Garnish with lemon slice and serve.
