Southwest Spice Blend
Cumin
Chili Powder
Coriander
Granulated Garlic
Onion Powder
White Pepper
Salt
Measure equal parts and blend well.
Tequila Cream
8 oz heavy cream
2 tbsp of tequila
2 tbsp of lime juice
Heat the heavy cream until reduced by 2/3 (approximately 6 oz); then add tequila and lime and stir.
Salsa
4 medium oranges
1/2 cup diced red onion
1/4 cup coarse chopped cilantro
1 fresh minced jalapeño
1 tbsp tequila
1 tbsp lime juice
Pinch of salt
Ingredients
6 Alaskan Halibut Steaks, 7-8 oz each
1 tbsp butter
Cut the peel from the four oranges and slice out the segments; place in a medium mixing bowl. Add the remaining ingredients. Mix well and set aside.
Preheat the oven to 350 degrees. Butter the bottom of a casserole dish and then rub the fish on one side with the Southwest spice blend. Place the rubbed side up and bake in the oven until the fish flakes on touch (about 5 minutes per inch of thickness). While the fish is cooking, make the tequila cream. Pour over fish once cooked. Top fish with a large spoonful of fresh salsa and serve.
